Ingredients:
1 packet Bacon Horseradish Dip Mix
4 large potatoes
1 egg
8 oz cream cheese
3 tablespoons milk
Salt and pepper to taste
1 cup shredded cheddar cheese
Parmesan cheese (for topping)
Paprika (for topping)
Instructions:
Prepare the potatoes: Scrub the potatoes clean and bake them for 1 hour at 350°F until tender.
Make the cheesy filling: In a mixing bowl, beat the cream cheese, milk, and egg until smooth. Add the shredded cheddar cheese, salt, pepper, and the Bacon Horseradish Dip Mix. Stir until well combined.
Scoop the potatoes: Once baked, remove the potatoes from the oven. Cut each potato in half lengthwise, then gently scoop out the inside, leaving a boat-like shell.
Fill the boats: Mash the scooped potato into the cheese mixture and stir until smooth. Spoon the mixture back into each potato shell.
Bake the boats: Place the filled potato halves on a 9x13-inch baking dish or cookie sheet. Sprinkle the tops with Parmesan cheese and a dash of paprika. Bake for 20-25 minutes at 350°F, until the tops are golden and bubbly.
