Looking to take your baked potatoes from basic to brilliant? This is the ultimate creamy, veggie-packed upgrade for your spuds. Loaded with cheddar cheese, tender broccoli, and a burst of herb and vegetable flavors from the Very Veggie Dip Mix, this easy-to-make topper transforms simple baked potatoes into a satisfying, crowd-pleasing meal.

Ingredients:

  • 1 packet Very Veggie Dip Mix

  • 1 cup sour cream

  • 1 (10 oz.) package chopped broccoli, thawed and drained

  • 1 ½ cups shredded cheddar cheese

Directions:

  1. Mix it up: In a medium bowl, combine the Very Veggie Dip Mix, sour cream, chopped broccoli, and shredded cheddar cheese. Stir until well blended.

  2. Chill: Cover the mixture and refrigerate for several hours to allow the flavors to fully develop.

  3. Prepare your potatoes: While the topper is chilling, bake your favorite baking potatoes (such as russet or Yukon gold) at 400°F for 45–60 minutes, or until tender.

  4. Top & Serve: Once your potatoes are baked, split them open and generously spoon the Cheesy Broccoli Topping over each one. Let the warmth of the potato melt the cheese slightly for an irresistible finish.

  5. Optional Garnishes: Add a sprinkle of extra cheddar cheese, crispy bacon bits, or chopped green onions for even more flavor and color.

Serving Suggestions:

  • Serve over baked sweet potatoes for a slightly sweet twist.

  • Use as a warm dip for crusty bread or tortilla chips.

  • Mix with cooked pasta for a quick, cheesy veggie pasta dish.

Make It Your Own:

  • Swap cheddar cheese for a Mexican blend or smoked gouda.

  • Stir in cooked, crumbled bacon for extra savoriness.

  • Add a dollop of Greek yogurt for a tangy flavor boost.

  • Mix in cauliflower or spinach for added veggie variety.
