This soup is the ultimate comfort food, blending the mild flavor of cauliflower with a creamy, cheesy base. The addition of a Very Veggie Dip Mix enhances the flavor, making this soup rich, savory, and hearty. Whether you prefer a smooth, velvety texture or a bit of chunkiness from the cauliflower, this soup is highly customizable. It's perfect for cozy nights or as a satisfying starter to any meal.


Ingredients:

  • 1 packet Very Veggie Dip Mix

  • 1/2 cup water

  • 1 (10 oz) package of cauliflower (fresh or frozen)

  • 1/2 cup evaporated skim milk

  • 3 oz cheese (diced, your choice of cheddar, mozzarella, or a blend)

  • Salt and pepper to taste


Instructions:

  1. Cook the Cauliflower:

    • In a large pot, combine the cauliflower, water, and the Very Veggie Dip Mix. Bring it to a boil, then reduce the heat and cook until the cauliflower is very soft and overdone (mushy). You can use a fork to check if it's easily mashable.

  2. Mash the Cauliflower:

    • Once the cauliflower is cooked and soft, use a fork or potato masher to mash it to your desired consistency. You can leave some texture or mash it completely smooth, depending on your preference.

  3. Add Milk and Cheese:

    • Pour in the evaporated skim milk and add the diced cheese. Stir to combine, and heat the mixture over medium heat until the cheese is melted and fully incorporated into the soup.

  4. Season:

    • Taste the soup and add salt and pepper to your liking. For extra depth, you can add a pinch of garlic powder or onion powder.

  5. Serve:

    • Ladle the soup into bowls and serve warm.
