Craving a warm, hearty, and flavorful vegetarian dish? This Southwest Vegetarian Chili is packed with rich beans, savory tomatoes, and a bold kick of southwestern spice.

Ingredients:

  • 1 packet Sizzlin' Southwestern Dip Mix

  • 1 (15 ½ oz) can red kidney beans, drained

  • 1 (14 ½ oz) can great northern beans, drained

  • 1 tsp sugar

  • 1 tablespoon chili powder

  • 1 (14 ½ oz )can diced tomatoes

  • 1 (8 oz) can tomato sauce

  • ¾ cup green pepper, chopped

  • 2 cups cooked rice (hot)

Instructions:

  1. Combine the ingredients: In a large pot, combine the Sizzlin' Southwestern Dip Mix, red kidney beans, great northern beans, sugar, chili powder, diced tomatoes, tomato sauce, and chopped green pepper.

  2. Simmer the chili: Bring to a boil, then reduce the heat and let it simmer for about 15 minutes, stirring occasionally to combine the flavors.

  3. Serve & enjoy: Top each serving of the chili with ½ cup of hot cooked rice. Enjoy the hearty, southwestern-inspired flavors!

Make It Your Own:

  • Add corn for a sweet crunch that complements the beans.

  • Stir in some diced jalapeños for extra heat.

  • Top with cheese or sour cream for a creamy, indulgent finish.

  • Mix in some avocado for a creamy, fresh contrast.

Pro Tip: This chili makes a great base for a meal prep—just store in the fridge for several days or freeze for later use!
